
This is the recipe I make when I’m too tired to think, but still want something warm, filling, and actually good.
One pot. 30 minutes. Everyone eats it.
Ingredients (serves 4)
- 2 tbsp olive oil
- 1 lb chicken breast or thighs, cubed
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 cup white rice (uncooked)
- 2 cups chicken broth
- ½ cup heavy cream (or milk)
- 1 cup frozen peas or broccoli
- Salt, pepper, paprika to taste
- Optional: shredded cheese, fresh parsley
Instructions
- Heat olive oil in a large pot over medium heat.
- Add chicken, season with salt, pepper, and paprika. Cook until browned (5 mins). Remove and set aside.
- In the same pot, sauté onion and garlic until soft (2 mins).
- Add rice, stir to coat in the oil.
- Pour in chicken broth, bring to a boil.
- Reduce heat to low, cover, and simmer for 15 minutes.
- Stir in cream, cooked chicken, and frozen veggies.
- Cover and cook another 5 minutes until rice is tender and veggies are warm.
- Top with cheese or parsley if you like.
Why this works:
- One pot = minimal cleanup
- Protein, carbs, and veggies all in one dish
- Leftovers reheat beautifully
- Kid-friendly, but adults actually enjoy it too
Variations:
- Swap chicken for sausage
- Use brown rice (add 10 more minutes cook time)
- Add spinach in the last 2 minutes
