Some nights, dinner needs to be fast, easy, and something everyone will actually eat. These sesame soy noodles have saved me more times than I can count.
Inspired by the Asian flavors I grew up with, this recipe comes together in 15 minutes with pantry staples — no fancy ingredients required.
Ingredients (serves 2-3)
- 200g noodles (spaghetti or ramen noodles work great)
- 3 tbsp soy sauce
- 1 tbsp sesame oil
- 1 tbsp rice vinegar
- 1 tsp honey or sugar
- 2 cloves garlic, minced
- 1 tsp fresh ginger, grated
- 2 green onions, sliced
- Sesame seeds for topping
- Optional: soft boiled egg, cucumber slices
Instructions
- Cook noodles according to package directions. Drain and set aside.
- In a bowl, whisk together soy sauce, sesame oil, rice vinegar, honey, garlic, and ginger.
- Toss warm noodles with the sauce until well coated.
- Top with green onions and sesame seeds.
- Add a soft boiled egg or cucumber slices if you like.
- Serve immediately — or cold the next day as leftovers!
Tips:
- Make the sauce ahead and store in the fridge for up to a week
- Add shredded rotisserie chicken for extra protein
- Kids love this with a little less garlic
