One-Pot Creamy Chicken and Rice (Weeknight Lifesaver)



This is the recipe I make when I’m too tired to think, but still want something warm, filling, and actually good.

One pot. 30 minutes. Everyone eats it.

Ingredients (serves 4)

  • 2 tbsp olive oil
  • 1 lb chicken breast or thighs, cubed
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 cup white rice (uncooked)
  • 2 cups chicken broth
  • ½ cup heavy cream (or milk)
  • 1 cup frozen peas or broccoli
  • Salt, pepper, paprika to taste
  • Optional: shredded cheese, fresh parsley

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add chicken, season with salt, pepper, and paprika. Cook until browned (5 mins). Remove and set aside.
  3. In the same pot, sauté onion and garlic until soft (2 mins).
  4. Add rice, stir to coat in the oil.
  5. Pour in chicken broth, bring to a boil.
  6. Reduce heat to low, cover, and simmer for 15 minutes.
  7. Stir in cream, cooked chicken, and frozen veggies.
  8. Cover and cook another 5 minutes until rice is tender and veggies are warm.
  9. Top with cheese or parsley if you like.

Why this works:

  • One pot = minimal cleanup
  • Protein, carbs, and veggies all in one dish
  • Leftovers reheat beautifully
  • Kid-friendly, but adults actually enjoy it too

Variations:

  • Swap chicken for sausage
  • Use brown rice (add 10 more minutes cook time)
  • Add spinach in the last 2 minutes

This is comfort food without the stress. Sometimes that’s exactly what we need. 🍚🤍
